These compounds in high concentration are toxic and can cause food poisoning, including nausea, stomach cramps, diarrhea, and vomiting. 

Usually, wild cucumbers contain significant levels of cucurbitacin and are very bitter.

The cucumber we grow in the garden or buy in the store tends to have fewer amounts of the bitter compound.

The bitter compounds are likely to be more concentrated in the stem end than in the blossom end of the cucumber

I recommend using your taste.

Cut a small piece of your cucumber and lick it if cucurbitacins are very bitter, don’t hesitate to dispose of it.

The Office of Dietary Supplements (ODS) recommends that women aged 19 years and over consume 90 mcg of vitamin K each day and men 120 mcg helps improve calcium absorption.

I grow cucumbers in my garden.

I would say, it is the best way to have an organic and fresh product if you grow your plant yourself.

I harvest them when they still small.

In my opinion, they taste better, and I love the crunchy part of it.

If you want to plant cucumbers

There are two types:

Slicing varieties and pickling

Picked cucumbers
Picked cucumbers
  1. Slicing cucumbers are smooth and dark green in appearance
  2. Pickling cucumbers are smaller than the slicing varieties; they have a bumpy texture and thinner skin for absorbing pickling spices.

Like most fruits and vegetables

Cucumbers need a lot of sunshine, water, and warm weather.

Cucumbers are vining plants, they need plenty of space, but you can grow-up vertically, in that way they don’t take much room in your area.

I like the Armenian variety because it does well in hot weather

This type of cucumber are long slender light green fruits

The fruit is sweet with a mild citrusy flavor.

Socrates cucumber does well in colder conditions and can be grown indoors in locations that stay between 50 to 82 degrees.

Here some tips to plant your cucumbers

First, find a place with maximum sunshine, add compost to your soil to give them plenty of nutrients

The key is to keep the soil slightly moist at all times

Water deeply about a twice a week

Add mulch to help conserve the humidity

Lifting the vines off the ground promotes better airflow around your plant to prevent some disease.

If you buy regular cucumber in the supermarket, they are covered with wax.

This wax is to protect from the numerous hands that are touching them, between the harvest and the consumers.

You will need to wash the cucumber with a little vegetable brush before eating them.

The wax can seal pesticides and other contaminants within the skin.

Finally, it is preferable to buy organic cucumbers.

How much of cucumbers can I eat daily?

1 or 2 cups daily. Morning or lunch.

If you tend to bloat by eating onions, broccoli, beans. Then I will advise you to restrict the consumption of cucumbers at night.

You may want to try these cucumber salads. I assure you there are very tasty and refreshing to eat.

CUCUMBER SALAD

1 Cup of the cucumber finely sliced

One small red onion, chopped

Herbs, such, dill, parsley, chives

1/2 cup sour cream

1 Tablespoon Olive oil

Garlic.

Lemon juice

Sea Salt

Pepper

Mix all together, sour cream, herbs, olive oil, garlic, onion, cucumber, salt, and pepper.

Cover and chill.

In my kitchen,

I always have Tzatziki; I can serve it with chicken, any meat, or fish as well, as, with ratatouille, it tastes so delicious.

Here is my Tzatziki recipe for you:

2 Small cucumbers, cut into 1/4 inches pieces, the little pinch salt, put it in a bowl, then squeezes several times with your hands to release excess water.  Then drain.

In a bowl, mix, 1 cup plain nonfat yogurt, two tablespoons olive oil, two tablespoons, two tablespoons lemon juice, garlic crushed, and a 1/2 cup of fresh dill, pepper to taste.
