The origin of chia seeds
The word “Chia” is derived from the natural word “Chian”, meaning oil.

These tiny black and white seeds from the Salvia Hispanica plant have a long history.

Chia seeds were first used by the Aztecs as early as 3500 B.C and were a cash crop in the center of Mexico between 1500 and 900 B.C

As a matter of fact, chia was harvested in the Valley by the Teoti Imacan. It was at the time one of the main components of the Aztec diet.

And could be easily carried on long trips serving as a high energy food.

The Aztecs called “Chia” the food of endurance.

How was Chia used by the Aztecs people?

Research from Wikipedia.

I found that “chia” was used by the Aztecs as food.
They used to mix it up in water and drunk as a beverage.

In addition, they grounded chia into flour and uses as well in medicines and pressed for oil.

The fascinating part for me to know that chia flour could be stored for many years unbelievable! isn’t it?

The legend tells that by eating a single spoon you had the strength to walk 24 hours in a row without stopping.

Amazing historical secrets.

The Aztecs also offered chia to the Gods during religious ceremonies.

But, when the Spanish Conquerors landed the new land in 1500.

They repressed the natives and suppressed their traditions and the commercialisations system that had existed.

Subsequently, many crops that had held a major position in Pre-Columbian American diets. Were Banned by the Spanish, because of their close association with religion.

Chia, as a result, was deliberately eliminated.

More recent historical facts.

Amazingly survived but only in a regional area in Mexico for the last 500 years.

Until early 1990 a group of American and South American Scientists, Nutritionists and Agriculturalists.

Began collaborating in commercial production of chia in Argentina in the hope of rediscovering.

The lost nutritional plants in the Aztec tradition and civilizations.

Today chia is grown and consumed commercially in its native Mexico and as well as:

  • Bolivia
    Australia and
    The Southwestern United States.
  • Guatemala

Functional properties of Chia seeds.

The plant.

Chia is an annual herb growing up to 1,75 meters (5.7 feet) tall.

With opposite leaves that are 4-8 cm (1,6-3.1 in) long and 3-5 cm (1.2-2.0 in) wide.

Its flower is purple or white and is produced in numerous clusters in a spike at the end of each stem.

The seeds.

Typically, chia seeds are small ovals with a diameter of around 1 mm (0,039 in)

They’re mottle-colored, with brown, gray, black, and white.

The seeds are hydrophilic, absorbing up to 12 times their weight in a liquid when soaked.

While soaking, the seeds develop a mucilaginous coating.

That gives chia-based beverages a distinctive gelatinous texture.

Other Uses.

They also may be made into a gelatin-like substance or consume raw.

The gel from ground seeds may be used to replace the egg content in cakes.

While providing other nutrients, and believe me is a common substitute in vegan baking.

Is there any difference between, black and white seeds?
